This DIY Walking Tour of Bordeaux is around 6.5 kilometres long (about 4 miles). “Normal” walking speed is around 7km/h (or 4mph); so, at around half that walking speed, this is a very easy, and enjoyable, 2 hour stroll.
But if you actually want to visit some of these places in central Bordeaux, I would allow a full day for this walk (maybe even two days).
The walk itself starts in the Marché des Capucins (as markets are always better first thing in the morning), and ends in the Jardin Public (later in the day when it should be pleasantly warmer).

However, I would recommend taking a full day to fully enjoy your stroll around central Bordeaux.
